Summer is in full swing and you can find me in my garden almost every day. I can't believe Neil and I have been gardening for three years now. We have a few favorite veggies we plant each year like sweet potatoes, squashes, pumpkins (for carving), peas and peppers. This year we added in tomatoes and melons that are doing great. The best part of owning a garden is eating the harvest! Some of our favorite dinners to make at home are:
I know not everyone has access to a garden to grow their own food so I met up with Suzanne Farrell, R.D. of Cherry Creek Nutrition while shopping at Sprouts to chat about some of her favorite plant based products that anyone can buy year round. A few of these were Ripple pea-based milk, watermelon and all the raw fruits and veggies, Boar's Head dark chocolate cacao hummus (great for dessert), SoDelicious coconut based ice cream and several assorted chips and crackers.
One thing Suzanne mentioned is that living a plant based diet doesn't mean you are living a healthier life and that we should be paying attention to plant based labels to make sure they are supplying the essential amino acids we need. She also gave me assurance that it is OKAY to incorporate meat into my diet. I am what they call a Flexitarian, someone who enjoys meat and enjoys the rewards of plant based living. If you are curious about a plant based diet, I recommend speaking with a nutritionist or registered dietitian to make sure you are getting a balance of vitamins and supplements into your diet.
