There is all this buzz around liquid cacao but the real buzz is Cholaca, a pure-liquid cacao company located in Boulder, Colorado. Cholaca was founded in 2012 by Ira Leibtag, an eco-conscious man with so much love for sustainability, his partners (the farmers) and his product. I was going to blog about a recipe but I can't without telling you about the difference Ira is making.
He personally is traveling throughout Ecuador and Peru to meet with Cacao farmers to form partnerships with. He isn't just investing in their cacao trees but most importantly, in rebuilding the rainforests. By replanting the trees farmers are chopping down to use for wood, Ira is encouraging his parnters to plant more trees for when the demand of cacao is too large to keep up with supply. He is making a huge difference and I hope one day he is awarded for his sustainability moves as a business owner.

I love Cholaca in my coffee or as a coffee substitute. I also have made hot cocoa out of it and drank shots of it for a little boost. While visitng the Cholaca HQ we made face scrubs, chocolate ginger bread men, and hot cocoa. It was so much fun! I can't wait to bake and cook with Cholaca.
